Chocolate-Walnut-Banana cake!

Chocolate-Walnut-Banana-Cake



Ingredients

200gm flour, sifted
250ml refined oil
200gm icing sugar
2 bananas, mashed
1tsp baking powder
2 bars dark chocolate
a handful of walnuts, chopped
3 eggs


Method

1. Cream the mashed bananas and icing sugar together till they are completely mixed.
2. Add eggs, a little at a time and mix well.
3. Add the oil and stir well.
4. Break the chocolate into pieces, and microwave for 1 minute. Smoothen the lumps and mix it in with the egg mixture.
5. In a separate bowl, sift together flour, salt and baking powder.
6. Fold in the flour with the egg mixture, and mix well.
7. Grease a microwave safe dish and pour in the batter.
8. Sprinkle the chopped walnuts on the batter.
9. Microwave for 55 minutes at 180degrees C
10. Remove, let cool, and enjoy! :D

Best Brownies Ever!

Sorry for the late post! It's been way too long I know! But what can I say...life's like that! :) Anyway, let's start over with a batch of the best microwave chocolate walnut brownies ever!!!

Chocolate Walnut Brownies


The picture sucks, but it was seriously delicious!

Ingredients

190 gm butter
3 eggs
310 gm Demerara sugar
190 gm refined flour
30 gm cocoa powder
280 gm dark chocolate
7 gm baking powder
120 gm walnuts, chopped

Method

1. Break the chocolate into small pieces and melt in a clean bowl on top of a hot water bath.
2. Beat the butter with the Demerara sugar and add the eggs slowly, mixing continuously.
3. Sieve the flour, baking powder and cocoa powder separately to mix well.
4. Mix the melted chocolate into the butter mix. Combine hald of the chopped walnuts into the batter.
5. Fold the flour and cocoa powder mix into the batter.
6. Spoon the brownie mix into a microwave safe dish and level it with a spatula.
7. Sprinkle the remaining chopped walnuts on it.
8. Microwave the chocolate brownies at 180 degrees for about an hour.
9. Remove from the microwave. Cool and turn out to a wire rack.
10. Cut into bars and serve.
11. Enjoy!!! :D

An Italian Dinner!

It has been a long while since I posted something, work commitments and all! But yesterday I knew I had to cook something to share with everyone, so I did just that! I zeroed in on an Italian dinner of Pasta Aglio Olio, Veg Au Gratin, and Garlic Bread, and I am sharing the recipes here!

1. Pasta Aglio Olio



Ingredients

4 tbsp oil
3 large cloves of garlic, crushed
2 tsp red chilli flakes
1 tsp oregano
300 gm pasta (preferable spaghetti)
1/2 tsp freshly ground black pepper
5 tbsp grated Parmesan cheese
Salt to taste

Method
1. Boil pasta in sufficient water along with some salt.
2. Once the pasta is done, in a frying pan, heat oil. Add garlic, oregano, and chilli flakes. Cook for about one minute. The oil will be infused with the flavor of garlic and chillies, so you can remove them from the oil if you want to. I didn't!
3. Add the pasta to the frying pan, and coat thoroughly.
4. Add salt and pepper and mix well.
5. Sprinkle in the cheese and mix well.
6. Serve immediately

2. Veg Au Gratin



Ingredients

5 tbsp peas (boiled)
1 potato (diced and boiled)
5 tbsp french beans (diced and boiled)
1 carrot (diced and boiled)
100 gm broccoli (or cauliflower) (chopped and boiled)
1 tbsp butter
1 tbsp garlic (chopped)

For white sauce

20 gm flour
1 tbsp butter
1 cup hot milk
5 tbsp cream
1/2 tsp freshly ground black pepper
3-4 flakes garlic (chopped)
1/4 tsp nutmeg powder
5 tbsp Parmesan cheese
Salt to taste

Method:
1. In a frying pan, heat 1 tsp butter and saute garlic and boiled vegetables for 2-3 minutes. Remove and keep aside.
2. In a fresh pan, heat the remaining butter, add flour and whisk for a minute on gentle flame. Don't let it brown.
3. Gradually whisk in the milk and let it come to a simmer, whisking continuously. Whisk in nutmeg, salt, pepper, and cream.
4. Remove from heat and add the grated cheese and garlic.
5. In a lightly greased casserole, put in the sauteed vegetables. Pour the sauce over it.
6. Bake this casserole in the oven for 20 minutes at 225 Celsius.
7. Remove from heat and serve with garlic bread.

3. Garlic Bread


Ingredients:
6 slices of bread
3 tbsp butter
4 tsp garlic paste

Optional:
2 tbsp finely chopped capsicum
1 finely chopped green chilly
1 tbsp finely chopped onion
1 tbsp grated cheddar cheese
2 tsp butter

Method:
1. Mix butter and garlic paste together, till smooth.
2. Spread the paste over the bread.
3. Toast the slices in the oven for about 5 minutes on 180 Celsius.
4. To make cheese chilli toast, saute onions, green chilli, and capsicum with the butter for 2 minutes. Add cheese to this mixture.
5. Spread the mixture on bread and bake for 5 minutes on 180 Celsius.


Everything served together!

So this was last night's dinner! It was really delicious...I do hope you try these out!
